Cheese and Tomato Flan

Pastry (shortcrust)

Ingredents

• 4 ozs plain flour
• 1 oz butter
• 1 oz lard
• 4 tablespoons of water
• 1 tablespoon of grated parmesan

Make pastry & chill for 30 minutes, line 8” tin & chill again for 30 minutes

Bake blind for 10 minutes, remove foil/beans & cook for a further 5 minutes @ 200°c

Filling

Ingredents

• 3 ozs cheese
• 1 thick slice of stale bread
• 1 medium onion
• 1 egg
• ¼ pint of milk
• Pinch of cayenne pepper

Add tomatoes to the top to decorate…

Cook until it no longer wobbles ! 🤣
