- 2 red onions, finely diced
- 6 mixed peppers, seeded & diced
- 6 garlic cloves, finely grated
- 2 chillies, seeded & finely chopped
- 1 litre tomato passata
- 1 tbsp caster sugar
- 1 tsp ground coriander
- 2 tsp ground ginger???
- Lime juice
- Coriander
- Black beans/kidney beans
- Spinach - frozen
- Wraps

Passata below & above once wrapped & grated cheese (or substitute on top) and into oven
200°c/180°c fan/gas 6
