Heat oven to 180°C or 350°F or Gas mark 4. Line a baking tray 30 x 20 cm with baking parchment. Put sugar, syrup, butter, apple juice in pan and gently bring to boil. Remove from heat and stir in all other ingredients, mix well and transfer to prepared tin, press mixture with a fork until well packed. Bake in preheated oven for 20 minutes, leave to cool. When still slightly warm score into slices of desired size.

When completely cool cut into pre-scored slices and store in an airtight container. It will keep for one week. Serve with a cup of piping hot tea or wrap up and pop it in your pocket for a snack on your bike.
