125g unsalted Butter
100g Caster Sugar
75g soft light Brown Sugar
1 egg, lightly beaten
170g Plain Flour
1⁄2 teaspoon Baking Powder
Pinch of Salt
2 tbsp. Golden Syrup
50g Porridge Oats
100g Raisins
Melt butter, add to both sugars and mix in a bowl.
Add syrup and beaten egg.
Sift flour, baking powder, salt and mix in with butter and sugar.
Stir in oats and raisins.
Mix well.
Spoon [tablespoon] onto baking tray lined with baking paper.
Put in a pre-heated oven @ 190c - gas 5 for 8 - 10 minutes.
Leave to cool for 5 minutes before transferring to wire cooling rack.
